Convivium began as an ambitious visionary project by Guido Coffa and his Bar Manager Paolo Sanna. Their ambition was to infuse ”the Spirit of the land in a glass”, creating the conditions for skilled hands to turn the fruits of Nature into delicious drinks. The Convivium bar has its special way of conveying the enigmatic energy of the volcano, the sea, the land with its fruits, its herbs and its scents, and mixing these ingredients to create powerful drinks, the drinks of Monaci’s wisdom.
Harvesting, transforming, desiccating, mixing syrups, perfumes, distillates and tinctures. Everything here is rigorously hand-made and produced from the black lands of Monaci delle Terre Nere, from its organic products to its herbs. All of this flows into Paolo Sanna’s Cocktail menu, whose every drink is a liquid experience, a sip of Monaci delle Terre Nere’s essence to be enjoyed through all five senses. The old wine cellar of the estate is a welcoming place, featured with modern design furniture and a grand fireplace to keep our guests warm in the winter.
